  • 4 large flour tortillas
  • 2 cups cooked chicken (shredded)
  • 8 slices bacon (cooked and crumbled)
  • 2 cups Mexican cheese blend (shredded)
  • 1/2 cup ranch dressing
  • 1 cup tomatoes (diced)
  • 1/4 cup red onion (finely chopped)
  • 2 tbsp fresh cilantro (chopped)
  • 2 tbsp butter (for cooking)

Method
 

Preparation
  1. In a bowl, mix the shredded chicken with ranch dressing until well coated.
  2. Add the crumbled bacon, diced tomatoes, chopped onion, and cilantro. Mix thoroughly.
  3. Layer one tortilla with a handful of cheese, followed by the chicken mixture, and another layer of cheese.
  4. Fold the tortilla in half to create a quesadilla.
Cooking
  1. In a skillet, melt butter over medium heat.
  2. Cook each quesadilla for 2-3 minutes per side, or until golden brown and crispy.

Notes

Cut into wedges and serve on a colorful plate, with extra ranch dressing or salsa on the side. You can also customize with jalapeƱos or more veggies for added flavor.
