Main Protein
  • 4 pieces boneless skinless chicken breasts Thighs can be used as a flavorful alternative.
Dairy
  • 8 oz cream cheese Make sure it’s softened for easy blending.
  • 1 cup Parmesan cheese Can substitute with pecorino.
Seasoning/Spice Blend
  • 1 teaspoon Italian seasoning Can swap with oregano and basil.
  • 2 cloves garlic Opt for fresh for the best taste.
Liquids
  • 1 cup chicken broth Vegetable broth is a great alternative.
Aromatics & Vegetables
  • 1/2 cup sun-dried tomatoes Fresh tomatoes can be used as an alternative.

Method
 

Preparation
  1. Start by preparing the chicken breasts. Rinse them under cold water and pat them dry with a paper towel.
  2. Place the chicken breasts in the bottom of the crockpot and spread the softened cream cheese evenly over it.
Cooking
  1. Sprinkle the Italian seasoning and minced garlic over the chicken.
  2. Pour in the chicken broth slowly to surround the meat.
  3. Add sun-dried tomatoes on top of the chicken and cream cheese.
  4. Cover the crockpot and set it to low for about 5 hours.
  5. Taste the sauce about 30 minutes before serving and adjust the seasonings if necessary.
  6. Once done, shred the chicken in the crockpot and mix it with the creamy sauce. Let it sit for 10 minutes before serving.

Notes

Enhance flavor with fresh herbs before serving. Customize with different spices or additional veggies. Serve with crusty bread.
