  • 2 pieces chicken breasts Trimmed and seasoned with salt and pepper.
  • 1 cup heavy cream Can substitute with half-and-half or dairy-free cream.
  • 1 cup Parmesan cheese, grated Distribute evenly over the chicken.
  • 3 cloves garlic, minced Fresh garlic recommended for best flavor.
  • 1 teaspoon Italian seasoning Adjust according to preference.
  • Salt to taste Salt For seasoning the chicken.
  • Pepper to taste Pepper For seasoning the chicken.
  • 8 oz pasta (such as penne or rotini) Add towards the end of cooking to prevent mushiness.
  • 1 bunch fresh parsley for garnish Chopped, for garnish before serving.

Method
 

Preparation
  1. Start by spraying your crockpot with non-stick spray.
  2. Place the two chicken breasts at the bottom of the crockpot.
  3. In a bowl, mix the minced garlic and Italian seasoning together, and spread this mixture evenly over the chicken.
  4. Gently pour the heavy cream over the chicken and sprinkle the grated Parmesan cheese on top.
Cooking
  1. Cover the crockpot and set it to low heat. Cook for 4-6 hours until the chicken is fully cooked and tender.
  2. About 30 minutes before serving, stir in the uncooked pasta.
  3. Once everything is done, shred the chicken with two forks directly in the crockpot and mix well to combine.

Notes

Great served with a side salad or garlic bread. Adjust the recipe by adding spinach or cherry tomatoes for extra nutrition.
