  • 1 pound baby potatoes, halved Wash and halve for even cooking; alternatively, use sweet potatoes.
  • 1 cup chicken broth Can substitute with vegetable broth for a vegetarian option.
  • 1/2 cup heavy cream Be mindful of curdling if cooked on high for too long.
  • 1/2 cup grated Parmesan cheese Use freshly grated for best flavor.
  • 4 cloves garlic, minced Alternatively, garlic powder can be used.
  • 1 teaspoon Italian seasoning Alternatively, mix dried basil, oregano, and thyme.
  • Salt and pepper to taste
For Serving
  • Fresh parsley, chopped For garnish. Can substitute with basil or chives.

Preparation
  1. Begin by setting your crockpot to low heat.
  2. Place the chicken breasts at the bottom of the crockpot.
  3. Layer the halved baby potatoes on top of the chicken.
  4. In a separate bowl, whisk together the chicken broth, heavy cream, and Italian seasoning.
  5. Pour the broth mixture gently over the chicken and potatoes.
  6. Sprinkle the minced garlic over the top.
Cooking
  1. Cover the crockpot and let it cook for 6-7 hours on low or 3-4 hours on high.
  2. When ready, the chicken should shred easily and the potatoes must be fork-tender.
Serving
  1. Serve the chicken and potatoes in a large bowl, drizzling some creamy sauce over the top.
  2. Pair with steamed vegetables or a fresh salad for a complete meal.
