Ingredients
  

Main Protein
  • 4 pieces boneless, skinless chicken breasts Trim excess fat and cut into uniform pieces. Can substitute with chicken thighs or tofu.
Aromatics & Vegetables
  • 2 cups broccoli florets (fresh or frozen) Best when fresh; cut into bite-sized pieces.
Liquids/Dairy
  • 1 can cream of chicken soup (10.5 oz) Enhances richness.
  • 1 cup chicken broth Use low-sodium for better salt control.
  • 2 cups shredded cheddar cheese For a creamy texture.
  • 4 oz cream cheese Softened for easy mixing.
  • 1 tbsp olive oil For searing.
Seasoning/Spice Blend
  • 1 tsp garlic powder Adjust to taste.
  • 1 tsp onion powder Adjust to taste.
  • 1 tsp salt Adjust to taste.
  • 1/2 tsp black pepper Adjust to taste.
Starch/Pasta
  • cooked rice or pasta Optional for serving.

Method
 

Preparation
  1. Pat the chicken breasts dry with a paper towel for a nice sear.
  2. Heat olive oil in a skillet over medium-high heat and sear the chicken for 3-4 minutes on each side until golden brown.
  3. Place the seared chicken breasts in the crockpot.
Cooking
  1. Pour in the cream of chicken soup and chicken broth, stirring to combine.
  2. Sprinkle garlic powder, onion powder, salt, and black pepper; stir again.
  3. Add broccoli florets over the chicken mixture without stirring.
  4. Beat the softened cream cheese until smooth and dollop it over the broccoli.
  5. Cover the crockpot and set it to low for 6 hours.
  6. Once cooked, stir in shredded cheddar cheese until melted. Adjust seasoning if necessary.

Notes

Use fresh herbs for added flavor. Customize by adding vegetables or adjusting spices. Leftovers can be stored in an airtight container for up to 3-4 days.
