  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • to taste salt and pepper

Method
 

Preparation
  1. In a slow cooker, combine the chicken, diced tomatoes, black beans, corn, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper.
  2. Stir to combine.
Cooking
  1. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through.
  2. Remove the chicken and shred it with two forks, then return it to the soup.
Serving
  1. Serve hot, topped with crispy tortilla strips, fresh cilantro, and a squeeze of lime.
