  • 2 pieces boneless skinless chicken breasts
  • 28 oz can crushed tomatoes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon Italian seasoning
  • 2 cups uncooked rotini pasta
  • 1 cup shredded Parmesan cheese
  • Salt and black pepper to taste

Method
 

Preparation
  1. Place the chicken breasts in the bottom of your crockpot.
  2. Pour the crushed tomatoes and chicken broth over the chicken.
  3. Stir in garlic powder, onion powder, Italian seasoning, salt, and pepper.
Cooking
  1. Cover and cook on low for 6 hours.
  2. Remove the chicken, shred it with two forks, and return it to the pot.
  3. Stir in the heavy cream and uncooked rotini pasta.
  4. Cover and cook for an additional 30 minutes, until the pasta is tender.
  5. Just before serving, mix in the shredded Parmesan cheese.

Notes

Enhance flavor with red pepper flakes. Customize with vegetables like spinach or zucchini. Serve with homemade croutons for crunch.
