Preparation
- In a large skillet, heat olive oil over medium heat. Brown the beef stew meat on all sides (about 5-7 minutes).
- Transfer the beef to a crockpot.
- Add the chopped carrots, diced potatoes, chopped onion, and minced garlic to the crockpot.
- In a separate bowl, mix the beef broth, tomato paste, thyme, salt, and pepper. Pour this mixture over the ingredients in the crockpot.
- Add the bay leaf.
Cooking
- Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender.
- Remove the bay leaf before serving.
- Serve hot, optionally with crusty bread or mashed potatoes.
Notes
Enhance the flavor by adding a splash of red wine to the broth mixture. Customize the stew by adding mushrooms, peas, or green beans for extra vegetables. For a heartier meal, serve it over rice or with a side salad.
