  • 2 pounds beef stew meat
  • 4 carrots, chopped
  • 4 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced

  • 4 cups beef broth
  • 2 tablespoons tomato paste
Herbs and Seasoning
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Preparation
  1. In a large skillet, heat olive oil over medium heat. Brown the beef stew meat on all sides (about 5-7 minutes).
  2. Transfer the beef to a crockpot.
  3. Add the chopped carrots, diced potatoes, chopped onion, and minced garlic to the crockpot.
  4. In a separate bowl, mix the beef broth, tomato paste, thyme, salt, and pepper. Pour this mixture over the ingredients in the crockpot.
  5. Add the bay leaf.
Cooking
  1. Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender.
  2. Remove the bay leaf before serving.
  3. Serve hot, optionally with crusty bread or mashed potatoes.

Notes

Enhance the flavor by adding a splash of red wine to the broth mixture. Customize the stew by adding mushrooms, peas, or green beans for extra vegetables. For a heartier meal, serve it over rice or with a side salad.
