  • 1 teaspoon fresh rosemary Chopped, can substitute with dried.
  • 1/2 teaspoon garlic powder Adds subtle flavor.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into even cubes, about 1-inch in size.
  3. In a large bowl, combine the diced sweet potatoes with melted butter, garlic powder, salt, and black pepper. Stir well to ensure all pieces are coated.
  4. Mix in the chopped parsley, rosemary, and grated Parmesan cheese until the sweet potatoes are well-coated.
Baking
  1. Spread the sweet potato mixture in a single layer on a baking sheet lined with parchment paper.
  2. Bake for 25-30 minutes, stirring halfway, until golden and crispy.
  3. Check for doneness; they should be fork-tender with a crispy outside.
Serving
  1. Remove from the oven and let cool slightly before serving.
  2. Serve warm, ideally on a beautiful platter.

Notes

Consider adding cayenne pepper for a spicy kick. Store in an airtight container in the refrigerator for up to 3 days.
