Ingredients
  

For the Filling
  • 1 package Egg roll wrappers
  • 2 cups Cabbage, shredded
  • 1 cup Carrots, grated
  • 1 cup Bell peppers, diced
  • 1/2 cup Green onions, chopped
  • 1 cup Cooked chicken or tofu (optional) Use chicken for non-vegan option.
  • 3 tablespoons Soy sauce
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • to taste Salt and pepper
For Cooking
  • as needed Cooking spray Use for greasing the air fryer basket.

Method
 

Preparation
  1. In a large bowl, combine shredded cabbage, grated carrots, diced bell peppers, chopped green onions, and optional chicken or tofu.
  2. Stir in soy sauce, minced garlic, minced ginger, salt, and pepper. Mix well.
  3. Take an egg roll wrapper and place a spoonful of the filling in the center.
  4. Fold the bottom corner over the filling, then fold in the sides, rolling it up tightly. Seal with a bit of water.
Cooking
  1. Spray the air fryer basket with cooking spray and arrange egg rolls in a single layer.
  2. Cook in the air fryer at 375°F (190°C) for about 10-15 minutes until golden brown, flipping halfway through.

Notes

Serve hot with sweet chili sauce or soy sauce for dipping. Cut in half for easy sharing.
