Ingredients
  

Main Protein
  • 2 pieces boneless, skinless chicken breasts, halved horizontally Ensure they are halved for even cooking.
Seasoning/Spice Blend
  • Salt and Pepper Salt and pepper to taste Don't over-salt, as the parmesan will also add saltiness.
Liquids/Dairy
  • 1 cup heavy cream Simmer gently to avoid curdling.
Aromatics & Vegetables
  • 3 cloves garlic, minced Sauté until fragrant.
  • 3 cups fresh spinach Don't overcook; it should remain bright green.
Optional Finishing Ingredients
  • 1/2 cup sun-dried tomatoes, chopped Can use roasted red peppers as an alternative.
  • 1/2 cup parmesan cheese, grated Use freshly grated for best flavor.

Method
 

Preparation
  1. Season the chicken breasts with salt, black pepper, paprika, and onion powder.
Searing the Chicken
  1. Heat 3 tablespoons of sun-dried tomato oil in a large skillet over medium-high heat.
  2. Cook the chicken for about 5-7 minutes on each side or until golden brown.
Creating the Sauce
  1. Remove the chicken from the skillet and set aside.
  2. Add minced garlic and sauté for just 30 seconds until fragrant.
  3. Stir in the sun-dried tomatoes and Dijon mustard.
  4. Slowly pour in the heavy cream while stirring continuously.
  5. Allow it to simmer gently for 2-3 minutes until it thickens slightly.
Finishing Touches
  1. Toss in fresh spinach and grated parmesan cheese into the sauce.
  2. Stir until the spinach wilts and cheese melts.
  3. Return the chicken to the pan, allowing it to simmer in the sauce for 5 minutes.
  4. Sprinkle with fresh parsley before serving.

Notes

Add a squeeze of lemon juice for brightness. Customize with different vegetables like mushrooms or asparagus.
