Creamy Tomato Garlic Pasta

Ingredients
  

Oils
  • 2 tablespoons Olive Oil Use extra virgin olive oil for the best taste. Can substitute with melted butter.
Aromatics & Vegetables
  • 1 small Onion, finely chopped Shallots can be used instead.
  • 4 cloves Garlic, minced Be careful not to overcook the garlic.
Liquids/Dairy
  • 14 oz Crushed Tomatoes or Tomato Sauce Low-sodium versions recommended.
  • 1 cup Heavy Cream Can substitute with plant-based cream.
  • ½ cup Parmesan Cheese, grated Use freshly grated for a richer flavor.
Pasta
  • 8 oz Pasta (penne, fettuccine, or spaghetti) Can use gluten-free pasta.
Seasoning/Spice Blend
  • 1 teaspoon Italian Seasoning
  • ½ teaspoon Red Pepper Flakes Adjust according to your heat preference.
Garnish
  • to taste Fresh basil or parsley Add just before serving for the best flavor.

Method
 

Preparation
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat for about 2-3 minutes.
  2. Add the chopped onion and cook, stirring, until soft and translucent, about 5 minutes.
  3. Stir in minced garlic and cook for another 1-2 minutes until fragrant.
Cooking
  1. Pour in the can of crushed tomatoes or tomato sauce, along with Italian seasoning, red pepper flakes, salt, and black pepper. Stir and let it simmer for about 5-7 minutes.
  2. Pour in the heavy cream and bring to a gentle simmer, stirring occasionally for another 3-5 minutes.
  3. While the sauce simmers, cook the pasta according to package instructions until al dente, reserving some pasta water before draining.
  4. Add the drained pasta to the skillet with the sauce, tossing to combine and adjusting with reserved pasta water as necessary.
  5. Sprinkle in the grated Parmesan cheese and toss until melted and well combined.

Notes

Enhance flavor with a splash of lemon juice. Customize with sautéed vegetables or proteins. Serve with garlic bread or a fresh green salad.
