Method
Searing the Chicken
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add the chicken breasts and sear for about 5-7 minutes per side until golden brown.
Preparation of Aromatics and Sauce
- Remove chicken from the pan; set aside on a plate.
- In the same pan, add 2 tablespoons of butter and melt.
- Add the diced onion and minced garlic; sauté for about 3-4 minutes until onion is translucent.
- Sprinkle in 2 tablespoons of flour, stirring for about 1 minute.
- Gradually pour in 1 cup of chicken broth and mix until smooth.
- Add 1 cup of heavy cream, thyme, paprika, and garlic powder to the sauce.
Finishing Cooking
- Return the chicken to the pan, cover, and simmer for 10-15 minutes.
- While chicken is simmering, cook rice in a separate pot.
- Fluff the rice with a fork once cooked and set aside.
Serving
- Serve the chicken over a bed of rice, spooning the creamy sauce generously on top.
- Garnish with chopped parsley before serving.
