Creamy Smothered Chicken and Rice

Ingredients
  

Main Protein
  • 2 lbs Boneless, skinless chicken breasts Trim any excess fat and season with salt and pepper.
Starch
  • 2 cups Long-grain white rice Rinse to remove excess starch before cooking.
Seasoning/Spice Blend
  • 1 teaspoon Dried thyme Toast spices briefly to enhance flavors.
  • 1 teaspoon Paprika
  • ½ teaspoon Garlic powder
Liquids/Dairy
  • 1 cup Chicken broth Use at room temperature for smooth blending.
  • 1 cup Heavy cream Avoid boiling to prevent curdling.
Aromatics & Vegetables
  • 1 medium Onion Diced, sauté until translucent.
  • 3 cloves Garlic Minced for even cooking.
Optional Finishing Ingredients
  • ¼ cup Fresh parsley Chopped finely for garnish.

Method
 

Searing the Chicken
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add the chicken breasts and sear for about 5-7 minutes per side until golden brown.
Preparation of Aromatics and Sauce
  1. Remove chicken from the pan; set aside on a plate.
  2. In the same pan, add 2 tablespoons of butter and melt.
  3. Add the diced onion and minced garlic; sauté for about 3-4 minutes until onion is translucent.
  4. Sprinkle in 2 tablespoons of flour, stirring for about 1 minute.
  5. Gradually pour in 1 cup of chicken broth and mix until smooth.
  6. Add 1 cup of heavy cream, thyme, paprika, and garlic powder to the sauce.
Finishing Cooking
  1. Return the chicken to the pan, cover, and simmer for 10-15 minutes.
  2. While chicken is simmering, cook rice in a separate pot.
  3. Fluff the rice with a fork once cooked and set aside.
Serving
  1. Serve the chicken over a bed of rice, spooning the creamy sauce generously on top.
  2. Garnish with chopped parsley before serving.

Notes

Flavor enhancement with lemon juice or adding vegetables like peas or bell peppers can customize the dish. It’s perfect for meal prep!
