  • 8 oz orzo pasta Cook according to package instructions.
  • 1 lb shrimp, peeled and deveined Ensure shrimp is fresh; do not overcook as they can become rubbery.
  • 2 tbsp olive oil
  • 3 cloves garlic, minced Sauté until fragrant but avoid browning.
  • 1 cup heavy cream Can substitute with half-and-half for a lighter sauce.
  • 1 cup chicken broth Use low-sodium for better control over saltiness.
  • 1/2 cup grated Parmesan cheese
  • to taste salt and pepper
  • to taste fresh parsley for garnish Add just before serving.

Method
 

Preparation
  1. Heat olive oil in a large skillet over medium heat.
  2. Add the shrimp and cook for 2-3 minutes, or until they turn pink and opaque. Remove and set aside.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds, until fragrant.
  4. Stir in the orzo and toast it for 1-2 minutes in the oil and garlic.
Cooking
  1. Pour in the chicken broth and bring to a gentle simmer. Cook for about 10 minutes, stirring occasionally.
  2. Lower the heat and add heavy cream. Stir well until everything is combined and creamy.
  3. Return the cooked shrimp to the skillet and stir in grated Parmesan cheese. Cook for another 2-3 minutes.
  4. Remove from heat and season with salt and pepper to taste. Sprinkle chopped fresh parsley over the top before serving.

Notes

Serve in shallow bowls and pair with a light salad or garlic bread. Consider sprinkling with red pepper flakes for added flavor.
