Preparation
- Heat olive oil in a large skillet over medium heat.
- Add the shrimp and cook for 2-3 minutes, or until they turn pink and opaque. Remove and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds, until fragrant.
- Stir in the orzo and toast it for 1-2 minutes in the oil and garlic.
Cooking
- Pour in the chicken broth and bring to a gentle simmer. Cook for about 10 minutes, stirring occasionally.
- Lower the heat and add heavy cream. Stir well until everything is combined and creamy.
- Return the cooked shrimp to the skillet and stir in grated Parmesan cheese. Cook for another 2-3 minutes.
- Remove from heat and season with salt and pepper to taste. Sprinkle chopped fresh parsley over the top before serving.
Notes
Serve in shallow bowls and pair with a light salad or garlic bread. Consider sprinkling with red pepper flakes for added flavor.
