Creamy Low Carb Chicken Casserole with Broccoli and Bacon

Main Ingredients
  • 5 cups broccoli florets Fresh or frozen broccoli; fresh preferred.
  • 8 slices cooked turkey bacon, chopped Cook until crispy.
  • 4 cups cooked chicken, shredded or diced Use rotisserie chicken for ease.
  • 3 cloves garlic, minced Sauté briefly to avoid burning.
  • ½ cup shredded mozzarella For mixing in the casserole.
  • ½ cup shredded cheddar For mixing in the casserole.
  • 1 cup ranch dressing Choose your favorite brand.
  • ½ cup shredded cheddar (for topping) Add on top of the casserole.
  • ½ cup shredded mozzarella (for topping) Add on top of the casserole.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Blanch the broccoli florets in boiling water for 3 minutes. Drain and run under cold water to stop cooking.
  3. In a separate skillet, sauté the minced garlic in a teaspoon of olive oil for 1-2 minutes until fragrant.
  4. In a large mixing bowl, combine the shredded chicken, crispy turkey bacon, and blanched broccoli. Add the sautéed garlic, ranch dressing, half of the mozzarella, and half of the cheddar cheese. Stir well to combine.
Baking
  1. Pour the mixture into a greased baking dish and spread it out evenly.
  2. Top with the remaining cheeses.
  3. Bake for 25-30 minutes until the cheese is bubbly and golden brown.
  4. Let cool for 5-10 minutes before serving.

Notes

Enhance flavor with herbs like thyme or parsley, and customize with other vegetables as desired. This casserole can be frozen before baking and stored in the refrigerator for up to 4 days.
