Creamy Lemon Chicken

Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts Trim any excess fat and pat dry before cooking. Can substitute with chicken thighs.
Cooking Oil
  • 2 tablespoons olive oil Consider using butter for a different flavor.
Sauce Ingredients
  • 1 cup heavy cream Stir in gently to maintain thickness. Can substitute with half-and-half.
  • 1 cup chicken broth Choose low-sodium for better control over salt levels. Vegetable broth can also be used.
  • 1 whole lemon (zested and juiced) Zest before juicing. Lime can be used as an alternative.
  • 2 cloves minced garlic Mince finely for even distribution. Garlic powder can be used if necessary.
  • to taste salt and pepper Adjust based on dietary needs.
Garnish
  • to taste fresh parsley Chop finely and add at the end for color.

Method
 

Searing the Chicken
  1. Heat olive oil in a skillet over medium-high heat. Add seasoned chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through, reaching an internal temperature of 165°F. Remove from the skillet and set aside.
Preparing the Sauce
  1. In the same skillet, lower the heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant.
Deglazing the Skillet
  1. Pour in the chicken broth to deglaze, scraping the bottom of the pan. Simmer for 2-3 minutes.
Adding Cream and Lemon
  1. Stir in the heavy cream, lemon zest, and lemon juice. Let simmer gently for 3-4 minutes until slightly thickened.
Finishing Touches
  1. Return the chicken to the skillet, coating it well with the sauce, and simmer for an additional 2 minutes.
  2. Taste the sauce and adjust seasoning with salt and pepper if needed.
Garnishing and Serving
  1. Remove from heat and sprinkle with chopped fresh parsley before serving.

Notes

For added flavor, marinate chicken in lemon juice and herbs beforehand. Customize with veggies like spinach or sun-dried tomatoes. Serve with crusty bread to soak up the sauce.
