  • 4 cups vegetable broth Can substitute with chicken broth for non-vegetarian option.
  • 1 cup heavy cream For a lighter version, substitute with half-and-half.
  • 4 cloves garlic, minced
  • 1 small onion, diced
  • 2 cups spinach or kale Can use other leafy greens if preferred.
  • to taste Salt and pepper
  • to taste Olive oil For sautéing.
  • to taste Parmesan cheese For serving, freshly grated.

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
  2. Stir in minced garlic and cook for an additional minute until fragrant.
  3. Pour in the vegetable broth and bring to a simmer.
  4. Add gnocchi to the pot and cook according to package instructions, usually about 2-3 minutes.
  5. Lower the heat and stir in the heavy cream and spinach or kale.
  6. Season with salt and pepper to taste. Let it simmer for 2-3 more minutes until greens are wilted.
  7. Serve hot, topped with freshly grated Parmesan cheese.
