Preparation
- Start by heating olive oil in a large skillet over medium-high heat.
- Place chicken thighs skin side down in the skillet and sear for about 6-7 minutes until golden brown.
- Season the top with salt, pepper, and garlic powder, then flip the chicken and cook for another 5-6 minutes until the internal temperature reaches 165°F.
Sauce
- Remove the chicken from the skillet and set aside.
- In the same pan, reduce the heat to medium, add butter, and let it melt.
- Stir in the minced garlic and cook for about 1 minute until fragrant.
- Pour in the chicken broth and scrape up the browned bits from the bottom of the pan.
- Stir in the heavy cream and bring to a gentle simmer.
- Add the freshly grated Parmesan cheese and mix until smooth.
Finish
- Add the seared chicken thighs back to the skillet and simmer for another 3-4 minutes.
- Sprinkle chopped parsley over the chicken before serving.
Notes
Marinating the chicken thighs in spices for an hour before cooking can enhance flavor. Serve with crusty bread to soak up the sauce.
