Ingredients

  • 2 lbs boneless skinless chicken breasts, cut into 1–1½ inch chunks Alternative: Use thighs for added flavor.
Starch/Pasta
  • 1.5 lbs baby potatoes, halved if large Alternative: Use sweet potatoes for a touch of sweetness.
Seasoning/Spice Blend
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder Alternative: Use your favorite seasoning blend.
Liquids/Dairy
  • 1 cup chicken broth Alternative: Use vegetable broth.
  • 1 cup heavy cream Be cautious with mixing to prevent curdling.
  • 1 cup sour cream
Aromatics & Vegetables
  • 3-4 cloves garlic, minced Alternative: Use shallots or green onions.
Optional Finishing Ingredients
  • 1 cup freshly chopped parsley Alternative: Use chives.

Method
 

Preparation
  1. Combine the cubed chicken and halved potatoes in the bottom of the crockpot.
  2. Evenly sprinkle the salt, pepper, paprika, garlic powder, and onion powder over the top.
Cooking
  1. Pour the chicken broth over the chicken and potatoes.
  2. Stir in the heavy cream and sour cream.
  3. Cover and cook on low for 6 hours.
  4. Once cooked, stir in the grated Parmesan and shredded mozzarella until melted.
Serving
  1. Sprinkle chopped parsley on top just before serving.
