  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 can cream of chicken soup (10 oz)
  • 1 teaspoon ranch seasoning mix
  • 1 lb potato gnocchi
  • 1 cup shredded cheddar cheese
  • 1/2 cup bacon, cooked and crumbled
  • Fresh parsley, chopped
  • Salt and pepper, to taste

Method
 

Preparation
  1. In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until browned.
  2. Add the chopped onion and minced garlic. Sauté until the onion is soft.
  3. Pour in the chicken broth, heavy cream, and cream of chicken soup. Stir in the ranch seasoning mix.
  4. Add the gnocchi and let it simmer for about 5 minutes until they are cooked through.
  5. Stir in the shredded cheddar cheese and crumbled bacon. Mix until cheese is melted and sauce is creamy.
  6. Season with salt and pepper to taste, and sprinkle chopped parsley before serving.

Notes

For a spicy kick, add a pinch of red pepper flakes. Customize with favorite veggies like spinach or bell peppers. Serve garnished with extra parsley, and pair with garlic bread or a fresh salad.
