  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can condensed cream of mushroom soup (10.75 ounce)
  • 1/2 cup heavy cream
  • 1/4 cup milk
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lb gnocchi
  • 1/2 cup shredded cheddar cheese (optional) Can be omitted or substituted with another cheese.

Preparation
  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until it becomes soft and translucent.
  2. Add the minced garlic and cubed chicken to the skillet. Cook until the chicken is browned and cooked through.
Cooking
  1. Stir in the condensed cream of mushroom soup, heavy cream, milk, dried thyme, salt, and black pepper. Mix well to combine.
  2. Bring the mixture to a gentle simmer and let cook for about 5 minutes to thicken.
  3. Cook the gnocchi according to package instructions and drain.
  4. Fold the cooked gnocchi into the creamy chicken mixture, ensuring they are well coated.
  5. If desired, sprinkle shredded cheddar cheese on top and let it melt for an extra layer of goodness.

Notes
