  • 4 pieces Chicken breasts Fresh, boneless chicken breasts preferred.
  • 1 can Coconut milk
  • 3 cloves Garlic, minced For flavor.
  • 1 inch Fresh ginger, minced For aromatic flavor.
  • 1 medium Onion, chopped
  • 2 medium Bell peppers, chopped Any color.
  • 2 medium Tomatoes, chopped
  • to taste Salt
  • to taste Pepper
  • 2 tablespoons Oil for searing Any cooking oil.

Preparation
  1. Heat oil in a skillet over medium-high heat.
  2. Season the chicken breasts with salt and pepper, then sear them in the skillet until golden brown on both sides (about 6-8 minutes total).
  3. Remove the chicken and set aside.
Cooking
  1. In the same skillet, add chopped onions, garlic, and ginger, and cook until fragrant (about 2-3 minutes).
  2. Add chopped bell peppers and tomatoes, then stir until softened (about 3-4 minutes).
  3. Pour in the coconut milk and bring to a simmer.
  4. Return the chicken to the skillet, cover, and let it cook in the sauce for about 15-20 minutes or until fully cooked.
  5. Serve hot, garnished with fresh herbs if desired.

Notes

Enhance flavor with a squeeze of lime juice before serving. Substitute chicken with shrimp or tofu for variety.
