  • 2 pieces chicken breasts Fresh or frozen
  • 1 cup pasta (penne or rotini) Uncooked
  • 1 can cream of chicken soup For creaminess
  • 1 cup chicken broth Low sodium recommended
  • 1 cup grated Parmesan cheese For flavor
Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
Garnish
  • Fresh parsley Optional, for garnish

Method
 

Preparation
  1. Place chicken breasts at the bottom of the crockpot.
  2. In a bowl, mix together cream of chicken soup, chicken broth, garlic powder, Italian seasoning, salt, and pepper.
  3. Pour the mixture over the chicken.
Cooking
  1. Cook on low for 6-7 hours or high for 3-4 hours.
  2. Before serving, shred the chicken in the crockpot and stir in the uncooked pasta and Parmesan cheese.
  3. Cover and cook for an additional 30 minutes, or until pasta is al dente.
  4. Garnish with fresh parsley and serve warm.

Notes

For additional flavor, consider adding sautéed mushrooms or spinach, or substitute chicken with shrimp. Serve with extra Parmesan or a drizzle of olive oil for a gourmet touch.
