Cooking Pasta
- Cook the bowtie pasta in salted boiling water according to package instructions. Drain and set aside.
Preparing the Chicken
- In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until browned and cooked through, about 6-8 minutes. Season with salt and pepper.
- Add minced garlic to the skillet and sauté for 1 minute.
Making the Sauce
- Pour in chicken broth and bring to a simmer.
- Add the cream, Italian seasoning, and cheeses to the skillet. Stir until the cheeses melt and the sauce is creamy.
Combining
- Mix in the cooked pasta and roasted vegetables. Toss to combine.
- Garnish with fresh parsley and serve hot!
