  1. In a large pot, melt butter over medium heat and sauté the chopped onion until it's soft.
  2. Add minced garlic and cook for another minute until fragrant.
Cooking

  2. Remove the pot from heat and use an immersion blender to blend the soup until smooth. (Or carefully transfer to a blender in batches.)
  3. Return the pot to low heat, add heavy cream, and stir until fully combined.
  4. Gradually add shredded cheddar cheese, stirring until melted and creamy. Season with salt and pepper to taste.
