Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and gather all your ingredients.
Mix the Creamy Dijon Sauce
  1. In a bowl, combine Dijon mustard, heavy cream, honey, garlic powder, onion powder, dried thyme, paprika, salt, and pepper. Stir until smooth.
Prepare the Chicken Thighs
  1. Place the chicken thighs in a large baking dish. Drizzle with olive oil and season with salt and black pepper.
Add Veggies
  1. Arrange carrots, parsnips, potatoes, and red onion around the chicken. Drizzle with olive oil, sprinkle with rosemary, salt, and pepper.
Coat Chicken in Sauce
  1. Pour the creamy Dijon sauce over the chicken and veggies. Toss gently to coat.
Bake the Dish
  1. Place the baking dish in the oven and bake for 45 minutes or until chicken is golden brown and internal temperature reaches 165°F (74°C).
Let It Rest and Serve
  1. Remove the dish from the oven and let it rest for 5 minutes before serving.

Notes

Consider adding a splash of lemon juice to brighten the dish. This recipe is very customizable with different herbs or vegetables.
