Ingredients
  

Dough Ingredients
  • 2.75 cups All-purpose flour Ensure to measure accurately and avoid over-mixing.
  • 0.75 cup Warm whole milk Heat to about 110°F.
  • 2.25 teaspoons Yeast Ensure it’s fresh for the best rising.
  • 0.25 cup Sugar This is used in the dough.
  • 1 large Egg Best if at room temperature.
  • 0.5 teaspoon Salt Enhances flavor.
  • 0.5 teaspoon Vanilla extract Adds extra flavor.
  • 0.25 cup Melted butter Use unsalted for the best results.
Filling Ingredients
  • 8 oz Cream cheese, softened Ensure it’s at room temperature for easier mixing.
  • 0.5 cup Powdered sugar This sweetens the filling.
  • 1 teaspoon Vanilla extract For flavor enhancement.
  • 0.5 cup Cold heavy whipping cream Whips nicely for a creamy filling.
  • pinch Salt Balances the sweetness.
Toppings
  • Raspberry jam Ensure it’s seedless if preferred.
  • Granulated sugar For rolling the donuts after frying.
Cooking Oil
  • Neutral oil for frying Preheat to 350°F before frying.

Method
 

Activate the Yeast
  1. Combine ¾ cup of warm milk with 2 ¼ teaspoons of yeast and ¼ cup of sugar in a bowl. Let it sit until frothy, about 5–10 minutes.
Mix the Dough
  1. Once the yeast mixture is frothy, add in 1 beaten egg, melted butter, 2 ¾ cups of flour, ½ teaspoon of salt, and ½ teaspoon of vanilla extract. Mix until a dough forms.
  2. Knead the dough on a floured surface for 5–7 minutes until smooth and elastic.
Let the Dough Rise
  1. Place the kneaded dough into a greased bowl, cover it, and let it rise in a warm place for about an hour, or until it doubles in size.
Shape the Donuts
  1. Once risen, punch down the dough and roll it out to about ½ inch thickness. Use a donut cutter to cut out donut shapes.
Fry the Donuts
  1. Heat neutral oil in a deep pan to about 350°F. Carefully place donuts in the oil and fry for about 2–3 minutes on each side until golden brown.
  2. Drain on paper towels after frying.
Prepare the Filling
  1. In a bowl, mix the softened cream cheese, powdered sugar, vanilla extract, cold heavy whipping cream, and a pinch of salt until smooth.
Fill and Serve
  1. Once the donuts have cooled, use an injector or piping bag to fill them with the cream cheese filling.
  2. Top with raspberry jam and roll in granulated sugar.

Notes

Enhance flavor by adding a hint of citrus zest to the cream cheese filling. Customize fillings with flavors like chocolate ganache or fruit spread.
