  • 8 oz linguine pasta
  • 2 pieces chicken breasts, diced
  • 1/2 cup cowboy butter or compound butter with garlic, herbs, and spices
Vegetables and Seasoning
  • 1/2 cup cherry tomatoes, halved
  • 1 cup spinach
  • Salt and pepper to taste
Garnishes
  • Grated Parmesan cheese for serving
  • Fresh parsley for garnish

Method
 

Preparation
  1. Cook the linguine pasta according to package instructions; drain and set aside.
Cooking
  1. In a large skillet over medium heat, melt the cowboy butter.
  2. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Stir in the cherry tomatoes and spinach, cooking until the spinach wilts.
  4. Toss in the cooked linguine, stirring to combine and coat with the sauce.
  5. Season with salt and pepper to taste.
Serving
  1. Serve hot, garnished with grated Parmesan cheese and fresh parsley.

Notes
