Country French Garlic Soup

Ingredients

  • 1 medium yellow onion, finely chopped
  • 20 cloves garlic, minced (about 1/3 cup) Use fresh garlic for best flavor.
  • 5 tablespoons olive oil, divided use 3 tablespoons for sautéing, 2 for garnishing or serving.
  • 4 cups water or broth Use vegetable broth for a vegetarian version.
  • 4 large eggs Whisk until frothy before adding to soup.
  • to taste salt
  • to taste pepper
  • as needed garlic croutons, for garnish
  • as needed chives and/or fresh sage, for garnish

Method
 

Preparation
  1. Heat 3 tablespoons of olive oil in a large pot over medium heat.
  2. Add the finely chopped onion and sauté until soft and translucent.
  3. Stir in the minced garlic and cook for a few minutes, careful not to burn it.
  4. Add 4 cups of water or broth, bring it to a boil, and let it simmer.
Cooking
  1. In a separate bowl, whisk the eggs until frothy.
  2. Gradually add the egg mixture to the soup, stirring to create ribbons.
  3. Season with salt and pepper to taste.
  4. Ladle the soup into bowls and garnish with garlic croutons and chopped chives or fresh sage.

Notes

For extra flavor, roast the garlic before adding it to the soup. Customize by adding veggies like carrots or leeks for variety.
