Preparation
  1. In a mixing bowl, combine cottage cheese, eggs, oat flour, vanilla extract, baking powder, and salt. Mix until well combined.
  2. Heat a non-stick skillet over medium heat and add a little butter or oil.
Cooking
  1. Pour batter onto the skillet to form pancakes. Cook until bubbles form on the top, then flip and cook until golden brown on the other side.
  2. Serve warm with your favorite toppings.

Notes
