  • 2 slices Whole grain bread Can substitute with gluten-free bread if needed.

Method
 

Preparation
  1. Toast slices of whole grain bread until golden brown.
  2. Soft-boil the eggs and peel them.
Assembly
  1. Spread a generous layer of cottage cheese on each slice of toast.
  2. Slice the soft-boiled eggs and place them on top of the cottage cheese.
  3. Drizzle sriracha sauce over the eggs, and season with salt and pepper to taste.
