Preparation
- Preheat the oven to 375°F (190°C) for even cooking.
- In a skillet, lightly sauté the chopped spinach and onion over medium heat for about 2-3 minutes until softened.
- In a large bowl, whisk together the cottage cheese, eggs, milk, garlic powder, salt, and pepper until smooth.
- Stir the sautéed spinach and onion into the egg mixture, followed by half of the shredded cheddar cheese.
- Grease a pie pan or baking dish and pour the mixture in, smoothing it out evenly. Sprinkle remaining cheese on top.
Baking
- Bake in the preheated oven for 40-45 minutes, or until the quiche is set and golden brown.
- Cool for about 5-10 minutes before slicing to set.
