  • 2 cups fresh spinach (chopped) Wash thoroughly; alternatives: kale or Swiss chard.
  • 4 large eggs Use large eggs for best results.
  • 1 cup milk Whole milk recommended; unsweetened alternatives like almond or oat milk also work.
  • 1 small onion (finely chopped) Finely chop for consistency; alternatives: shallots or leeks.
  • 1 teaspoon garlic powder Adjust quantity according to preference; fresh minced garlic can be used.
  • ½ teaspoon salt Adjust to taste.
  • ½ teaspoon pepper Adjust to taste.
  • 1 cup cheddar cheese (shredded, divided) Reserve some for topping before baking.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) for even cooking.
  2. In a skillet, lightly sauté the chopped spinach and onion over medium heat for about 2-3 minutes until softened.
  3. In a large bowl, whisk together the cottage cheese, eggs, milk, garlic powder, salt, and pepper until smooth.
  4. Stir the sautéed spinach and onion into the egg mixture, followed by half of the shredded cheddar cheese.
  5. Grease a pie pan or baking dish and pour the mixture in, smoothing it out evenly. Sprinkle remaining cheese on top.
Baking
  1. Bake in the preheated oven for 40-45 minutes, or until the quiche is set and golden brown.
  2. Cool for about 5-10 minutes before slicing to set.
