Ingredients
  

Eggs
  • 12 large large eggs Hard boil the eggs.
Filling
  • 1/2 cup mayonnaise Adds creaminess to the filling.
  • 2 tablespoons sour cream Can be adjusted based on taste.
  • 1 tablespoon chopped fresh cilantro Fresh herb for flavor.
  • 1 teaspoon lime juice Zesty flavor booster.
  • 1/2 teaspoon chili powder For a mild spice.
  • 1/4 teaspoon garlic powder For added depth of flavor.
  • Salt to taste Salt to taste Adjust according to preference.
  • Black pepper to taste Black pepper to taste Adjust according to preference.
  • 1/4 cup crumbled cotija cheese Can substitute with feta cheese.
  • 2 tablespoons finely diced red onion Adds crunch and flavor.
  • 1 tablespoon finely diced jalapeño (optional) For a spicy kick.
  • 2 tablespoons chipotle mayo For an extra smoky flavor.
  • Paprika Paprika for garnish For decoration.

Method
 

Preparation
  1. Hard boil the eggs by placing them in a pot and covering them with cold water. Bring to a boil, then reduce the heat and simmer for 10-12 minutes.
  2. Remove the eggs from the pot and cool them in an ice bath for a few minutes. Peel the eggs and slice them in half lengthwise.
  3. Scoop out the yolks into a bowl and mix them with mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and pepper until smooth.
  4. Fold in the corn, cilantro, cotija cheese, red onion, and jalapeño if using.
  5. Spoon or pipe the mixture back into the egg whites.
  6. Sprinkle each filled egg with paprika for garnish. Serve fresh!

Notes

Enhance flavor with lime zest for a citrus kick. Customize by swapping the cotija for feta cheese if preferred. For a fun serving style, place the deviled eggs in mini taco cups.
