- Hard boil the eggs by placing them in a pot and covering them with cold water. Bring to a boil, then reduce the heat and simmer for 10-12 minutes.
- Remove the eggs from the pot and cool them in an ice bath for a few minutes. Peel the eggs and slice them in half lengthwise.
- Scoop out the yolks into a bowl and mix them with mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and pepper until smooth.
- Fold in the corn, cilantro, cotija cheese, red onion, and jalapeño if using.
- Spoon or pipe the mixture back into the egg whites.
- Sprinkle each filled egg with paprika for garnish. Serve fresh!
Notes
Enhance flavor with lime zest for a citrus kick. Customize by swapping the cotija for feta cheese if preferred. For a fun serving style, place the deviled eggs in mini taco cups.
