Preparation
- Preheat oven to 350 degrees F. Line baking sheets with parchment paper or silicone baking mats and set aside.
- In a small bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat together the softened butter and granulated sugar on medium speed until combined.
- Add in the egg and vanilla extract, mixing until the mixture is smooth and lump-free, making sure to scrape the sides of the bowl.
Mixing
- Reduce the mixer speed to low and gradually add the dry ingredients into the wet ingredients. Mix until a cookie dough forms.
- Add the chopped cookies and white chocolate chips until evenly mixed.
Baking
- Use a small cookie scoop (about 2 tablespoons of cookie dough) to shape cookies in your hands and gently press down on each cookie slightly.
- Bake for 8-10 minutes or until the edges are set, even if the centers look a little underbaked.
- Allow the cookies to cool for a few minutes before transferring them to a cooling rack.
Notes
For a flavor boost, sprinkle sea salt on top of cookies before baking. You can customize the cookies with different types of chocolate chips or mix-ins.
