  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 large bell pepper, diced
  • 2 medium carrots, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste Salt and pepper
  • Corn tortilla strips For topping
  • Avocado, diced For topping
  • Lime wedges For serving

Method
 

Cooking
  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, bell pepper, and carrots, and sauté until softened, about 5-7 minutes.
  3. Stir in diced tomatoes, chicken broth, shredded chicken, cumin, chili powder, salt, and pepper.
  4. Bring to a simmer and cook for 20 minutes.
  5. Serve hot, topped with corn tortilla strips, diced avocado, a squeeze of lime, and fresh cilantro.

Notes

For extra flavor, add a dash of hot sauce or a sprinkle of cheese. Customize by adding black beans or corn for more texture. Serve with a side of crusty bread for a complete meal.
