  • 1 cup Granulated Sugar Can substitute with coconut sugar.
  • 1/2 cup Vegetable Oil A neutral oil works best; can substitute with melted coconut oil.
  • 3 large Eggs Use at room temperature for better mixing.

  • 2 cups Grated Carrots Use fresh carrots; wring out if wet.
  • 1/2 cup Chopped Nuts (Optional) Toast lightly for enhanced flavor; can substitute with raisins.
Cream Cheese Frosting
  • 8 ounces Cream Cheese Soften well to avoid lumps.
  • 1/2 cup Butter Must be at room temperature.
  • 2 cups Powdered Sugar Ensure a smooth blend.
  • 1 pinch Salt Enhances the cream cheese flavor.

Method
 

Preparation
  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a large bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. Step 3: In another bowl, mix the sugar, oil, eggs, and vanilla extract until smooth.
  4. Step 4: Gradually fold in the grated carrots and optional nuts into the wet mixture.
Baking
  1. Step 5: Pour the dry ingredients into the wet ingredients and mix until just combined.
  2. Step 6: Pour the mixture into a greased 9x13 inch baking pan and bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  3. Step 7: Let the cake cool completely in the pan before frosting.
Frosting
  1. Beat together the cream cheese, butter, powdered sugar, and salt until smooth and spread on the cooled cake.

Notes

For customization, try adding shredded coconut or different spices. Suitable for freezing and storage in an airtight container for up to 5 days.
