Preparation
- In a bowl, whisk together lime juice, olive oil, cilantro, garlic, cumin, chili powder, salt, and black pepper.
- Place the flank steak in a resealable bag and pour the marinade over the meat. Seal and refrigerate for at least 15 minutes.
Cooking
- Preheat a grill or skillet over medium-high heat. Remove steak from marinade and discard the marinade.
- Grill the steak for about 4-5 minutes per side for medium-rare. Let it rest before slicing it thinly.
Assembly
- In bowls, layer cooked rice, black beans, corn, cherry tomatoes, and sliced avocado.
- Top with sliced steak, red onion, and feta cheese if using. Garnish with extra cilantro and serve with lime wedges.
Notes
Add a pinch of cayenne pepper to the marinade for a spicy kick. Substitute chicken or shrimp for the steak for different protein options. Serve with tortilla chips for added crunch and texture.
