Ingredients
  

For the Cookie Crust
  • 1/2 cup granulated sugar Standard granulated sugar
  • 1/2 cup brown sugar Packed brown sugar
  • 1/2 cup butter, softened Make sure butter is at room temperature
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips
For the Ice Cream Layer
  • 2 cups cookie dough ice cream Alternatively, use any flavor of ice cream of your choice

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the egg and vanilla extract.
Mix Dough
  1. Combine the flour, baking soda, and salt in a separate bowl, then gradually blend into the creamed mixture.
  2. Stir in the chocolate chips.
  3. Press the cookie dough mixture into the bottom of the prepared cake pan to form a crust.
Baking
  1. Bake for 10-12 minutes, or until golden brown. Allow to cool completely.
Assemble
  1. Once cooled, layer the cookie dough ice cream on top of the crust.
  2. Freeze for at least 4 hours or until firm.
  3. Slice and serve for a delightful dessert.

Notes

Decorate with extra chocolate chips or whipped cream on top. Serve with fresh berries for a fruity touch. This cake can be made ahead of time and stored in the freezer.
