Ingredients
  

Main Ingredients
  • 1 lb chicken breast
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large pot, heat a splash of oil over medium heat.
  2. Add chopped onion and minced garlic, cooking until softened.
Cooking
  1. Add the chicken breast and brown on all sides, about 5 minutes.
  2. Pour in the diced tomatoes, black beans, corn, chicken broth, and taco seasoning.
  3. Stir well, then bring to a boil. Reduce heat and let simmer for 20 minutes.
  4. Remove the chicken once cooked, shred it, and return it to the pot.
  5. Season with salt and pepper to taste, mixing well.
  6. Serve hot with optional toppings.

Notes

Add a squeeze of lime juice for a zesty kick. Substitute ground turkey or beef for a different protein option. Serve with slices of avocado or jalapeƱos for extra flavor.
