Method
 

Cooking Steps
  1. In a large pot, heat olive oil over medium heat. Add chopped onion, carrots, and celery; sauté until softened.
  2. Stir in garlic and cook for 1 minute.
  3. Pour in chicken broth and bring to a boil.
  4. Add cooked chicken, egg noodles, thyme, salt, and pepper.
  5. Reduce heat and simmer for 10-15 minutes, or until noodles are tender.
  6. Garnish with chopped parsley before serving.

Notes

Add lemon juice to brighten up the flavors. Customize by adding vegetables like peas or spinach. Serve with a sprinkle of cheese for extra richness.
