Preparation
- Season chicken breasts with salt and pepper. Dredge in flour, shaking off excess.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add chicken breasts and cook for about 4-5 minutes per side, or until golden brown. Remove and set aside.
Cooking
- In the same skillet, add the remaining oil and sliced mushrooms. Sauté until tender.
- Add minced garlic and cook for another minute.
- Pour in the Marsala wine and chicken broth, scraping the bottom of the pan.
- Stir in the butter and heavy cream. Allow sauce to simmer and thicken for a few minutes.
- Return chicken to the skillet, coating it in the sauce. Cook until heated through.
- Serve hot, garnished with chopped parsley.
