  • 4 pieces boneless, skinless chicken breasts (about 1 1/2 pounds)
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup all-purpose flour, for dredging
  • 4 tablespoons olive oil, divided
  • 8 ounces cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/2 cup Marsala wine
  • 1 cup chicken broth
  • 2 tablespoons unsalted butter
  • 1/4 cup heavy cream
  • 2 tablespoons chopped fresh parsley For garnish

Method
 

Preparation
  1. Season chicken breasts with salt and pepper. Dredge in flour, shaking off excess.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  3. Add chicken breasts and cook for about 4-5 minutes per side, or until golden brown. Remove and set aside.
Cooking
  1. In the same skillet, add the remaining oil and sliced mushrooms. Sauté until tender.
  2. Add minced garlic and cook for another minute.
  3. Pour in the Marsala wine and chicken broth, scraping the bottom of the pan.
  4. Stir in the butter and heavy cream. Allow sauce to simmer and thicken for a few minutes.
  5. Return chicken to the skillet, coating it in the sauce. Cook until heated through.
  6. Serve hot, garnished with chopped parsley.

Notes

Enhance flavor by adding herbs like thyme or rosemary. Customize with your favorite mushrooms or spinach. Serve with crusty bread to soak up the delicious sauce.
