Preparation
- Gather all your ingredients on a clean surface. Dice chicken, chop vegetables, and mince garlic.
Cooking
- Heat 1 tablespoon of olive oil in a large pan over medium-high heat. Add the chicken and cook for about 5-7 minutes, until golden brown and reaches an internal temperature of 165°F.
- Add the chopped onion and minced garlic to the pan and cook for 2 minutes, until fragrant and translucent.
- Stir in broccoli florets and sliced mushrooms, cooking for another 5 minutes until the broccoli is bright green and tender but still crunchy.
- In a small bowl, mix the soy sauce, sesame oil, and cornstarch slurry. Pour this over the stir-fry and cook for an additional 2-3 minutes until the sauce thickens.
