Ingredients
  

Main Protein
  • 500 g chicken breast, diced Use fresh chicken for the best flavor and texture.
Aromatics & Vegetables
  • 2 cups broccoli florets Cut into similar-sized florets.
  • 2 cups mushrooms, sliced
  • 1 small onion, chopped
  • 2 cloves garlic, minced Building block of flavor.
Liquids
  • 2 tbsp soy sauce Add towards the end to avoid burning.
  • 1 tbsp sesame oil For a nutty flavor.
  • 1 tbsp olive oil To cook the chicken.
  • 1 tsp cornstarch For slurry.
  • 2 tbsp water For slurry.
Seasoning
  • salt Adjust to taste after cooking.
  • pepper Adjust to taste.
Optional Garnishes
  • toasted sesame seeds For added texture.
  • fresh cilantro For flavor and presentation.

Method
 

Preparation
  1. Gather all your ingredients on a clean surface. Dice chicken, chop vegetables, and mince garlic.
Cooking
  1. Heat 1 tablespoon of olive oil in a large pan over medium-high heat. Add the chicken and cook for about 5-7 minutes, until golden brown and reaches an internal temperature of 165°F.
  2. Add the chopped onion and minced garlic to the pan and cook for 2 minutes, until fragrant and translucent.
  3. Stir in broccoli florets and sliced mushrooms, cooking for another 5 minutes until the broccoli is bright green and tender but still crunchy.
  4. In a small bowl, mix the soy sauce, sesame oil, and cornstarch slurry. Pour this over the stir-fry and cook for an additional 2-3 minutes until the sauce thickens.
  5. Taste and season with salt and pepper as needed. Let it rest for a minute before serving.

Notes

Serve hot on a colorful plate with steamed rice or quinoa for a complete meal. Enhancements include a splash of lime juice or serving with spring rolls.
