Chicken Avocado Melt Sandwich

Ingredients
  

Main Ingredients
  • 2 pieces boneless skinless chicken breasts Season well with salt and pepper.
  • 1 tablespoon olive oil For cooking the chicken.
  • 1 piece avocado, sliced Fresh and ripe.
  • 4 slices cheese (Swiss, cheddar, or provolone) Choose your favorite type of cheese.
  • 4 slices bread (sourdough, ciabatta, or your choice) Preferably toasted.
  • 2 tablespoons mayonnaise For spreading on the bread.
  • 1 tablespoon Dijon mustard To add flavor to the sandwich.
  • 1 small red onion, thinly sliced For added crunch.
  • 1 piece tomato, sliced Fresh and ripe.
  • as needed as needed Butter or olive oil for grilling the sandwiches Use for grilling to achieve a golden crust.

Method
 

Cooking the Chicken
  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat the olive oil in a skillet over medium-high heat.
  3. Cook the chicken breasts for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from the skillet and let rest for a few minutes before slicing thinly.
Assembling the Sandwich
  1. Slice the avocado and prepare the cheese slices. Set aside.
  2. Spread a thin layer of mayonnaise and Dijon mustard on each slice of bread.
  3. On two slices of bread, layer the sliced chicken, avocado, and cheese. Add a few slices of red onion and tomato on top.
  4. Top each sandwich with the remaining slices of bread, mayo side down.
Grilling the Sandwich
  1. Heat a skillet or grill pan over medium heat. Add a bit of butter or olive oil to the pan.
  2. Place the sandwiches in the skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side. Press down gently with a spatula to help the cheese melt evenly.
  3. Remove the sandwiches from the skillet and let them cool for a minute before slicing in half. Serve warm.

Notes

For a twist, add fresh herbs like cilantro or basil. Customize with grilled veggies or turkey for variation.
