  • 2 pounds russet potatoes, peeled and small diced
  • 3-4 tablespoons oil
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 pound ground beef Can substitute with ground turkey or plant-based meat.
  • 1 packet taco seasoning
  • water, as directed on the taco seasoning packet
  • 8 ounces Mexican shredded cheese Use freshly shredded for best flavor.

Method
 

Preparation
  1. Gather all your ingredients and give the potatoes a good rinse.
Cooking Potatoes
  1. Heat the oil in a large skillet over medium heat.
  2. Add the diced potatoes, sprinkle with salt, pepper, garlic powder, and onion powder.
  3. Cook for about 15-20 minutes, stirring occasionally, until they are golden brown and crispy.
Browning the Beef
  1. While the potatoes are cooking, add the ground beef to a separate skillet.
  2. Brown it over medium heat for about 8-10 minutes until fully cooked, draining any excess fat.
  3. Mix in the taco seasoning according to packet instructions, adding water as directed.
  4. Let it simmer for a few minutes.
Combining Ingredients
  1. Once the potatoes are crispy, combine them with the seasoned beef in the skillet.
  2. Stir well and cook for an additional 5 minutes on low heat.
Finishing with Cheese
  1. Sprinkle the Mexican shredded cheese evenly over the potato and beef mixture.
  2. Cover and cook for about 2-3 minutes until the cheese is melted and bubbly.
Serving
  1. Remove from heat and serve warm, allowing guests to choose their preferred toppings.

Notes

Add a squeeze of lime juice for freshness. Customize with additional spices for heat or flavor.
