Cheesy Taco Potatoes

Ingredients
  

For the Potatoes
  • 2 pounds russet potatoes, peeled and small diced
  • 3-4 tablespoons oil
  • 1 ½ teaspoons salt
  • ½ teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
For the Taco Filling
  • 1 pound ground beef
  • 1 packet taco seasoning
  • as directed amount water, as directed on taco seasoning packet
  • 8 ounces Mexican shredded cheese
Optional Toppings
  • pico de gallo Fresh salsa
  • guacamole
  • sour cream

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine diced potatoes with oil, salt, pepper, garlic powder, and onion powder. Toss well to coat evenly.
Cooking
  1. Spread the seasoned potatoes on a baking sheet and bake for 30-35 minutes, or until golden and crispy, stirring halfway through.
  2. While potatoes bake, heat a pan over medium heat and brown the ground beef. Drain any excess fat.
  3. Stir in the taco seasoning and the appropriate amount of water as directed on the packet. Simmer for 5 minutes.
  4. Once potatoes are done, remove them from the oven and top with the ground beef and shredded cheese. Return to the oven for 5-7 minutes, until the cheese is melted.
  5. Add your favorite toppings and enjoy immediately!

Notes

Enhance flavor by mixing in sautéed bell peppers or jalapeños. Customize your cheesy taco potatoes with different proteins, like chicken or turkey. Serve with extra toppings on the side for everyone to create their own masterpiece.
