  • 2 cups diced potatoes Fresh or frozen can be used.
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced ham or bacon Optional.
  • 1 tablespoon olive oil or butter
  • to taste Salt and pepper
  • Chopped chives for garnish Optional.

Method
 

Cooking
  1. In a large skillet, heat the olive oil or butter over medium heat.
  2. Add the diced potatoes and cook until they are golden brown and tender, about 10-12 minutes, stirring occasionally.
  3. While the potatoes cook, whisk the eggs in a bowl and season with salt and pepper.
  4. Once the potatoes are done, push them to the side of the skillet and pour in the eggs. Stir gently to scramble until just set.
  5. If using, add the ham or bacon to the skillet and mix everything together.
  6. Sprinkle the cheddar cheese over the top and let it melt.
  7. Serve hot, garnished with chives if desired.
