  • 2 pounds boneless skinless chicken thighs Trimmed of excess fat for best results.
Liquids/Dairy
  • 1 cup BBQ sauce Choose a favorite brand or homemade variety.
Seasoning/Spice Blend
  • 2 tablespoons avocado oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder Mix well for better distribution.
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried mustard

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels.
  3. In a bowl, mix avocado oil, kosher salt, black pepper, garlic powder, onion powder, smoked paprika, and dried mustard.
  4. Rub the mixture all over the chicken to ensure each piece is well-coated.
  5. Place the seasoned chicken thighs snugly in a large baking dish.
Cooking
  1. Bake the chicken in the preheated oven for 30 minutes.
  2. After 30 minutes, take the chicken out and brush the BBQ sauce generously over each thigh.
  3. Return to the oven for an additional 15 minutes.
  4. Check that the chicken reaches an internal temperature of 165°F (75°C) before serving.
Serving
  1. Let the chicken rest for about 5 minutes before serving.

Notes

Marinate the chicken in the seasoning and BBQ sauce a few hours in advance for extra flavor. Customize sauces to suit your taste, and serve with fresh herbs for added color.
