- In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the sliced andouille sausage and cook until browned.
- Stir in the boneless chicken breasts and cook for a few minutes until the chicken is lightly browned.
Cooking
- Add the white beans, chicken broth, Cajun seasoning, and cumin. Bring to a boil.
- Reduce heat and simmer for about 20 minutes, or until the chicken is cooked through.
- Remove the chicken, shred it, and return it to the pot.
- Finally, stir in the shrimp and cook for another 5 minutes until they are cooked through.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions.
Notes
Add a squeeze of lime juice for a zesty kick. Customizations include using turkey instead of chicken or incorporating more vegetables for a vegetarian option.
