Ingredients
  

Proteins
  • 1 pound boneless, skinless chicken breasts
  • 1 cup andouille sausage, sliced
  • 1 cup shrimp, peeled and deveined
Base Ingredients
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cans white beans, drained and rinsed
  • 4 cups chicken broth
Seasonings
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • 2 tablespoons Olive oil
Garnish
  • to taste Chopped green onions For garnish

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the sliced andouille sausage and cook until browned.
  3. Stir in the boneless chicken breasts and cook for a few minutes until the chicken is lightly browned.
Cooking
  1. Add the white beans, chicken broth, Cajun seasoning, and cumin. Bring to a boil.
  2. Reduce heat and simmer for about 20 minutes, or until the chicken is cooked through.
  3. Remove the chicken, shred it, and return it to the pot.
  4. Finally, stir in the shrimp and cook for another 5 minutes until they are cooked through.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with chopped green onions.

Notes

Add a squeeze of lime juice for a zesty kick. Customizations include using turkey instead of chicken or incorporating more vegetables for a vegetarian option.
