  • 1 lb Andouille sausage, diced
  • 4 medium Potatoes, diced Use Yukon Gold or Russet for a creamy texture.
  • 1 cup Chopped onions
  • 1 cup Chopped bell peppers Any color bell pepper works.
  • 1 cup Chopped celery
  • 2 tbsp Cajun spices
  • 4 cups Broth (chicken or vegetable)
  • 1 cup Heavy cream
  • 1 cup Cheddar cheese, shredded For garnish and mixing.
  • to taste Salt
  • to taste Pepper

Method
 

Cooking
  1. In a large pot, cook the diced andouille sausage over medium heat until browned.
  2. Add chopped onions, bell peppers, and celery to the pot; sauté until softened.
  3. Stir in diced potatoes and Cajun spices, mixing well.
  4. Pour in the broth and bring to a boil; reduce heat and let it simmer until potatoes are tender, about 25 minutes.
  5. Add heavy cream and cheese, stirring until melted and creamy. Season with salt and pepper to taste.
  6. Serve hot, garnished with extra cheese if desired.
