  • 1 lb Andouille sausage Diced
  • 4 medium Potatoes Diced
  • 2 cups Mixed vegetables Such as carrots, celery, and bell peppers
  • 2 tbsp Cajun spice blend Add more for extra heat
  • 1 cup Heavy cream For creaminess
  • 1 cup Cheddar cheese Shredded
  • 1 medium Onion Chopped
  • 3 cloves Garlic Minced
  • 4 cups Chicken broth Low-sodium preferred
  • 1 tsp Salt To taste
  • 1 tsp Black pepper To taste

Method
 

Preparation
  1. In a large pot, cook diced andouille sausage until browned.
  2. Add chopped onions, garlic, and mixed vegetables, cooking until softened.
Cooking
  1. Stir in diced potatoes and Cajun spice blend.
  2. Pour in chicken broth and bring to a boil.
  3. Reduce heat and let simmer until potatoes are tender.
  4. Stir in heavy cream and cheddar cheese until melted.
  5. Season with salt and pepper to taste.
Serving
  1. Serve hot, garnished with green onions if desired.

Notes
